I'd like it if files and folders in the binder—excluding the Draft folder—were automatically sorted alphabetically (or there was an option to sort them).

I don't think this will happen, or at least not quite as you imagine it. The trouble is that it would be a permanent change... The point of the binder is that you shuffle your documents there as you wish. I may be able the option to sort the contents of an individual folder alphabetically, although it won't be high priority.

I agree that it's more useful to be able to shuffle them as you see fit. If you use the split view in the binder view you can already sort your stories by date, name, etcetera there.
