It would be helpful to be able to set a separate font for the full-screen editing mode. For instance, a sans-serif font to be easier on the eyes.

Unfortunately this is not possible. Ulysses can do this because it has a plain text editor, so swapping fonts doesn't mean anything as that information isn't stored in the file. When using rich-text, however, it is not possible to swap fonts. The colour can be changed using temporary attributes on the text, but temporary attributes unfortunately do not apply to things like font (in the Apple programming docs, they say "yet" here, but it has been like that for years so I don't expect it to change any time soon).
