I would like the ability to load the last used project. I am generally only working on one thing at a time so it would make sense. Maybe an option in the preferences would be a good place for this.

I agree, that would be a nice [optional] feature eventually. Though perhaps something more along the lines of a "Do you wish to open the last project 'Name of Project'", as it would be a tad frustrating for this to happen automatically, and the last project you opened is a massive thing that takes a while to load -- when you do not want it.
But, for beta usage, it isn't a good idea because what if you created a situation in your document that is causing Scrivener to crash on load.

The last project used is in the "File > Recent Projects" menu.

Yeah, I use the 'Recent Projects' to open the document. amberv has hit on an important point though while we are in Beta. But in the final version I would still like to be able to tick a box in the preferences page that would automatically open the last doucment I was working on. Yes I am that lazy. Plus, I'm a monogamist when it comes to writing

I will probably just go for a box that gives you the option to open your last document when opening, so you just have to hit a button - like in Ulysses. This won't be until release, though...
